Ingredients
1/4cupfig jam
1/4cupfinely chopped toasted walnuts
1small sprig fresh thyme, finely chopped
1teaspoonorange zest
pinchof coarse salt
8ounceround wheel Brie cheese
crackers and sliced baguette, for serving
Instructions
Preheat the oven to 350°F.
Place the brie wheel in a small cast iron skillet (or oven-safe dish) just a bit bigger than the brie itself, and then place the skillet on top of a baking sheet (just to catch any possible oozing cheese.) Cut criss-cross slits just through the top of the rind.
Put the fig jam in a small microwave safe bowl and warm in the microwave just to loosen, about 15 seconds. Stir in the chopped nuts, chopped thyme, orange zest, and a pinch of salt.
Pour/spread the fig-nut mixture over the brie, making sure the top is fully covered.
Bake on the middle rack of the pre-heated oven for 10 to 15 minutes or until the brie becomes melted. (TIP: press gently with the back of a spoon to see if the cheese has melted on the inside.)
Remove from the oven and let the brie sit for 3 to 5 minutes. Serve warm with bread, crostini, or crackers!

Use apricot jam instead. If you don't like figs, apricot jam is a great alternate.Do not remove the cheese rind. It's best to keep the brie rind (skin) on for this recipe, which is perfectly edible and it holds everything well together.Serving a larger crowd? Simply use a 16 ounce brie wheel and double all the other ingredients.
