Whisk together the 1/4 cup sugar and 1/2 teaspoon cinnamon. Thoroughly grease a 9×5 nonstick loaf pan with butter, making sure to get all over and in the corners, too. Add the cinnamon-sugar mixture and swirl the pan around until it’s coated. Discard excess.
In a small bowl, toss the diced apples with the brown sugar and cinnamon; set aside.
To make the bread, in a large bowl using a handheld electric mixer, beat the butter and sugar together until light and fluffy. Add in the eggs, one at a time, followed by the milk and vanilla. Beat in the flour, apple pie spice, baking powder, and baking soda until combined, scraping down the sides of the bowl to incorporate everything.
Pour half of the batter in the prepared pan, tapping it on the counter to evenly spread it out. Top evenly with half of the diced spiced apples. Repeat layers ending with the other half of the apple mixture. Using a spatula, gently press the apples down into the batter.
Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Let cool in pan for at least 1 more hour, then remove loaf from pan.
Whisk all the ingredients together for the glaze, if using, drizzle over the bread, allow to set, then slice and enjoy!

Add in some nuts. A 1/3 cup finely chopped toasted walnuts or pecans is a nice addition.Replace the vanilla. Rum, brandy, or maple syrup are all excellent substitutes in this apple bread.Use room temperature ingredients. The eggs and dairy products should all be at room temperature so they combine more efficiently and create a more uniform batter.The apple should be diced small and uniform. Small equal-sized pieces will distribute throughout the batter better and ensure an even cooking time.Have a smaller loaf pan? We always bake this apple bread in a 9×5 loaf pan, but if you have an 8x4x2 pan, it will still work. Note that since there’s less surface area, the loaf may be a bit taller and take a few extra minutes to bake.
