Soy sauce eggs are soft or hard boiled eggs soaked overnight in a savory soy, rice vinegar, and chili garlic marinade, turning into salty-sweet, umami-packed eggs perfect as a snack, for meal prep, or spooned over rice or ramen.
In a quart-sized jar or container (with a lid), whisk together the soy sauce, water, rice vinegar, brown sugar, chili garlic sauce, sesame oil, and scallions.
Place the eggs in the soy sauce mixture, making sure they're all submerged.
Seal with the lid and marinate in the refrigerator overnight/8 hours. (Marinating for just a few hours will give you a subtle salty soy sauce flavor, while soaking overnight will make the color and flavor much deeper and better.)
Remove the eggs from the liquid and serve as desired. We love them sliced in half with a bit of fresh cracked pepper, sesame oil, pickled red onion, and diced scallions. They're also fantastic over ramen, rice, or a salad for a quick, filling meal.

Notes
Sodium. The nutrition info reflects the entire batch of marinade, not what's actually absorbed per egg. The real sodium per egg is lower since you're not drinking the marinade.
Spice level. Start with the full 2 teaspoons of chili garlic sauce for a mild warmth, or cut it in half if you're serving picky eaters.
Soft vs. hard boiled. Both work here. Soft boiled gives you that jammy, ramen-shop yolk; hard boiled holds its shape better for snacking straight out of the fridge.
Reusing the marinade. You can pour the marinade over a second batch of eggs, but the flavor won't be nearly as strong, so I don't recommend it if you want the best result.
