4boneless pork chops(3/4 inch-thick)
1teaspooncoarse salt
1/2teaspoonfreshly cracked black pepper
1/4teaspoononion powder
1/4cupbutter, divided
1/4cupbrown sugar
1/2teaspoondried thyme(plus fresh thyme sprigs for garnish)
1/4teaspooncinnamon
1/8teaspoonnutmeg
1mediumGranny Smith apple, cored and sliced into half moons 1/4-inch thick
1mediumGala apple, cored and sliced into half moons 1/4-inch thick
1/4cupchopped toasted pecans
Instructions
Pat pork chops dry with a paper towel, then season on both sides with the salt, pepper, and onion powder.
Over medium heat, warm 1 tablespoon butter in a large nonstick skillet. Once bubbly, add the pork chops and cook 10 to 12 minutes, turning halfway through, until they reach an internal temperature of 145F. Transfer from the skillet to a plate, cover and keep warm.
In the same skillet, melt the remaining 3 tablespoons butter. Stir in the brown sugar, dried thyme, cinnamon, and nutmeg. Add the apples and toss to coat. Cover the skillet and cook until the apples are tender, 6 to 8 minutes.
Serve pork chops topped with the apple mixture along with the toasted chopped pecans. Garnish with fresh thyme, if desired.
