Ingredients
3 & 1/2poundwhole fryer chicken
1-2smalllemon slices
1sprigfresh thyme
1tablespoonRanch seasoning powder
1teaspooncoarse salt
1/2teaspoonblack pepper
1tablespoonlemon juice
1/2tablespoonWorcestershire sauce
2tablespoonsunsalted butter, room temperature
Instructions
Preheat oven to 425 degrees F. Set a rack inside a roasting pan and coat with nonstick cooking spray.
Remove giblets from inside of the chicken's cavity. Rinse the chicken inside and out. Thoroughly dry the chicken with paper towels.
Place the lemon slices, thyme, and a dash of coarse salt and pepper inside the chicken cavity.
In a small bowl, whisk together the seasonings, lemon juice, and Worcestershire.
Rub the chicken all over with the butter and seasoning mixture.
Tie the chicken legs together with kitchen twine and tuck the wings underneath.
Place chicken, breast side up, on the rack in the pan; transfer to the oven.
Roast, uncovered, until an instant thermometer registers 165 degrees F in the thickest part of the thigh (avoiding the bone), about 55 minutes.
Slice the legs, wings, and breasts and serve with your favorite sides.

Try Italian seasoning blend instead. 2 tablespoons room temperature butter, 1 teaspoon coarse salt, 1/2 teaspoon each black pepper, smoked paprika, dried thyme, onion powder, 1/4 teaspoon garlic powder, and 1/8 teaspoon cayenne pepper.
