Ingredients
½cupsweetened condensed milk
¼cupfreshly squeezed lemon juice
20ouncecan crushed pineapplefully drained
1cuplightly toasted sweetened coconut flakes
½cuptoasted chopped pecans
8ouncecontainer Cool Whipthawed (see note)
1Graham cracker pie crust

Instructions
Whisk together the sweetened condensed milk and lemon juice in a large mixing bowl.
Stir in the crushed pineapple, shredded coconut, and pecans.
Add the Cool Whip and fold together.
Transfer the filling into the pie crust and spread it evenly.
Cover and place the pie in the refrigerator for at least 4 hours to let the filling set, ideally overnight - the longer the better.
Serve with a dollop of whipped cream and a maraschino cherry. Enjoy!

*Toast the coconut and pecans: It deepens the flavor, though not required. Try walnuts or chopped almonds instead of the pecans, if preferred.**Use real whipped cream if you prefer. Just beat 1½ cups cold heavy cream with ¼ cup powdered sugar and 1 tsp vanilla until stiff peaks form.
