Notes
Use sharp cheddar for the best flavor. Mild cheddar works, but sharp cheddar stands out better against the rich dressing and salad mix-ins. Freshly shredded cheese has the best texture, but bagged shredded cheddar works fine when you need the shortcut.Chill it if you have time. This dish is delicious served right away. However, 30 minutes of chill time in the fridge does make a noticeable difference. The dressing thickens slightly, the onion powder softens into the mayo and Greek yogurt, and the whole salad tastes more cohesive!
