1Tbspsun-dried tomato oilplus more for serving, (see notes)

215 oz. canscannellini beansrinsed and drained, (see notes)
½cupvegetable broth(or chicken broth)
½tspdried thyme
¼tspdried oregano
¼tsponion powder
¼tspred pepper flakes
¼tspcoarse salt
¼tspblack pepper
2Tbspheavy cream
⅓cupfreshly grated Parmesan cheeseplus more for serving
2tspfresh lemon juice
chopped fresh basil or parsleyfor garnish
crusty breadfor serving
Instructions
Heat the oil in a medium pot or nonstick skillet over medium heat. Once shimmering, add the garlic and cook until fragrant, about 20 seconds.
Add the chopped sun-dried tomatoes and give it a stir. Add the beans, broth, and stir in all the seasonings.
Bring the mixture to a gentle bubble and let simmer for a few minutes. Then roughly mash a bit of the beans for a creamier texture.
Reduce heat to low and add the cream, Parmesan cheese, and lemon juice. Stir until the cheese is melted. Give it a taste and adjust seasonings, if needed.
Top with a drizzle of additional sun-dried tomato oil, more Parmesan, and fresh chopped basil or parsley. Serve with crusty bread and enjoy!

You can try any canned white bean you have on hand here. I love cannellini beans, but butter beans (lima beans), Great Northern beans, and navy beans are all good substitutes. Use an equal amount and drain and rinse them first. Chickpeas would be another good option!I use oil-packed sun-dried tomatoes and reserve 1 tablespoon of the oil for sautéing the garlic. If using dry-packed tomatoes, rehydrate them in hot water until softened, then drain and chop them. Then use 1 tablespoon of olive oil to sauté the garlic instead.
