These Jack Frost Jello Shots mimic the classic Jack Frost cocktail in beautiful color and tropical taste. Made with just 5 ingredients including two different types of rum, they're super fun and perfect for a winter holiday party!

Instructions
Place the plastic jello shot cups on a sheet pan without the lids on. Set aside.
Add the powdered JELL-O to a mixing bowl. Pour in boiling water and whisk until gelatin is completely dissolved.
Add in the cold pineapple juice, coconut rum, white rum, and Blue Curaçao. Whisk to combine.
Carefully pour the gelatin mixture into each plastic cup, filling until almost full.
Transfer sheet pan of jello shots into the refrigerator and chill for at least 4 hours or until fully set. Put lids on cups and keep in the fridge until ready to serve.
Right before serving, pipe a little fresh whipped cream on top and a sprinkle of toasted coconut flakes.

Notes
Pineapple juice. Make sure the pineapple juice is pasteurised and not freshly squeezed. Fresh pineapple juice will prevent the jello from setting properly.Use vodka instead. A Jack Frost cocktail is typically made with rum, but you can replace both rums with vodka, if preferred. Note that it will obviously change the flavor of these shots.Chill all the liquids. Make space in your fridge to chill the pineapple juice, coconut rum and white rum, and Blue Curaçao liquor. This ensures the jello sets properly.Use something with a spout for pouring. A large spouted measuring cup or mixing bowl that has a spout helps prevent spills when you’re pouring the liquid jello into the cups.Wait to garnish. Chill the shots until firm and then garnish right before serving.
