Ingredients
For the Meatloaf
2poundslean ground beef
1smallsweet onionfinely diced or grated
2clovesgarlicminced
1tablespoonminced chipotle pepper in adobo sauce
1cupquick cooking oats
1cupwhole milk
1largeegg
1/2teaspoonkosher salt
1/4teaspoonpepper
For the Glaze
1/2cuphoney
1tablespoonminced chipotle peppers in adobo sauce
2tablespoonsapple cider vinegar
Instructions
Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with foil and coat with nonstick cooking spray.
In a large mixing bowl, using your hands, combine all the meatloaf ingredients; mix thoroughly. Transfer to the prepared baking sheet and shape into a loaf approximately 2 inches high by 4 inches wide, making it as uniform as possible. Smooth the top.
Transfer meatloaf to the oven on the middle rack. Bake for 60 minutes; set a timer for 30.
While the meatloaf is cooking, make the glaze. In a medium bowl, whisk together the honey, minced chipotle peppers, and vinegar.
When the timer beeps at 30 minutes, generously brush the glaze over the top of the meatloaf. Place back in the oven for another 10 minutes. Repeat the glaze two more times in 10 minute intervals.
The meatloaf is done when the internal temperature reaches 170 degrees F. Let cool for 5-10 minutes before slicing and serving.
Notes
Bake in a loaf pan instead. The meatloaf can be cooked in a loaf pan if preferred, but cooking time will increase closer to 90 minutes, and you won’t be able to glaze the sides.Use sriracha. The chipotle peppers can be replaced with sriracha, but it will change the flavor and heat a bit.
