Ingredients
1cupfinely grated cheddar cheese(from a block, not pre-shredded from a package)
1/2cuphoney
3/4cupunsweetened pure applesauce
1largeegg
3cupsrice flour, plus more for dusting
Instructions
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large bowl, combine the cheddar cheese, honey, applesauce, and egg until incorporated.
Add in the rice flour and mix with a rubber spatula until combined.
Turn dough out onto a floured surface and roll out until it’s 1/4-inch thick.
Using a 3-inch cookie cutter, cut out shapes.
Arrange on the baking sheet.
Bake until just lightly browned on the bottom, 10-12 minutes.
Transfer to a rack and let cool completely. Make sure they are room temperature and crisp before storing.
