Ingredients
1/2cup(1 stick) unsalted butter, softened
15ouncebox German chocolate cake mix
1largeegg
1/2cupsweetened flaked coconut, divided
1/2cupbutterscotch chips
1/2cupsweetened condensed milk
Instructions
Preheat oven to 350 degrees F. Line a 9x9 baking pan with parchment paper.
With an electric mixer, cream the butter until smooth and fluffy. Beat in the cake mix, egg, and 1/4 cup of the coconut until combined and a thick dough forms.
Press 2/3 of the cake mixture in the bottom of the prepared pan. Sprinkle the remaining 1/4 cup of coconut and the butterscotch chips evenly over the dough. Then drizzle the sweetened condensed milk over the top. (Leave a little border bare, without sweetened condensed milk.)
Break up the remaining dough and crumble it over the top of the bars. Press lightly to seal.
Bake for about 29-32 minutes, until slightly browned. Cool completely, then make sure to chill for a few hours before cutting into bars.

Notes
They need to chill. Baked gooey bars need to cool and then chill before you cut them. If you don’t allow them to get cold and set, the gooey part will ooze out and you’ll have a big mess and not pretty bars.Add in some pecans. Toasted chopped pecans can be added to the dough or sprinkled on top with the coconut flakes.Make them in a bigger pan. You can do this in a 9x13 pan by using the whole can (14 oz) of sweetened condensed milk and 1 cup of butterscotch chips, but the bars will be thinner. Baking time will also need to be adjusted.
