Instructions
Make the Bars
Preheat the oven to 350°F. Grease a 9x13 inch pan with nonstick spray, place a sheet of parchment paper in the pan.
In the bowl of your mixer, cream together your butter, brown sugar, and granulated sugar on medium-high speed until the mixture has become light and fluffy, about 3 minutes.
Mix in your eggs and vanilla until all the egg is incorporated.
Slowly add in the flour, baking powder, and baking soda until you have all the ingredients combined.
Spread the mixture evenly into the pan.
Bake 18 to 22 minutes until it’s golden brown, then allow the bars to cool completely. (Don't be impatient - if you frost the cookie bars while they're still warm, the frosting will just melt.)
Make the Frosting
In a medium bowl, combine all the frosting ingredients with an electric hand mixer. Add a bit more milk only if needed, or alternatively, a bit more powdered sugar if it's too thin, until it’s the desired consistency – it should be thick, but spreadable.
Frost, Decorate, and Cut
Spread the frosting over the cooled cookie bar and immediately top with the sprinkles before it sets.
Cut into squares using a very sharp knife (and wiping off with a paper towel in between cuts.) Serve and enjoy!
