This quick and easy Jambalaya Casserole recipe is a flavor-packed and filling meal all made in one dish. Great for meal prep and busy weeknights with very little clean-up!

Ingredients
14ouncepackage kielbasa smoked sausage, sliced into 1/2-inch thick coins
1/2poundshrimp (31-40 count), peeled and deveined, tails off (thawed if frozen)
1/4cupolive oil
15ouncecan petite diced tomatoes with garlic and oregano, undrained
1mediumsweet onion, diced
1mediumred bell pepper, diced
2ribscelery, diced
2clovesgarlic, minced
1 & 1/2teaspoonscajun seasoning
2tablespoonsfinely chopped fresh parsley
coarse salt and pepper, to taste
1cupInstant rice (Minute® rice)(see note)
1cuplow-sodium chicken broth
Instructions
Preheat the oven to 425 degrees F. Coat a 10x15 baking dish with nonstick cooking spray.
Dump all the ingredients in the baking dish and toss to coat.
Cover very tightly with foil, transfer to the oven and bake for 30-40 minutes or until the rice is tender.

Notes
Use Minute Rice. In order for this recipe to turn out properly, you need to use Instant rice (Minute® rice). Long grain white rice requires more broth and a longer bake time, which will make the shrimp tough.
