In a large bowl, add the imitation crab and using a fork, gently flake it apart into pieces. Add in the red onion and celery.
In a small bowl whisk together the mayo, lemon juice, and seasonings until incorporated.
Pour the dressing over the crab ingredients and gently toss to coat.
Serve right away or cover and chill for later. It’s delicious on its own, on lettuce leaves, or on a croissant or brioche hot dog bun, or with crackers.
