Ingredients
1poundlean ground beef
1cupdiced sweet onion
3clovesgarlic, minced
1canROTEL, drained
1/2cupfinely chopped dill pickles, plus more for garnish
1tablespoonketchup
1tablespoonWorcestershire sauce
1/2teaspoonkosher salt
1/2teaspoonblack pepper
8ouncescream cheese, cubed and softened to room temperature
4ouncesshredded sharp cheddar cheese
4ouncesshredded Monterey Jack cheese
fresh chopped parsley, for garnish, optional
Kettle potato chips, for serving
Instructions
In a large skillet over medium-high heat add the ground beef and break it up with a wooden spoon. Add the onions and cook, stirring occasionally until the beef is cooked through with no pink left and the onions are translucent, 5-7 minutes. Add the garlic and cook until fragrant, about 20 seconds. Drain off any excess grease.
Add the tomatoes and chilies (Rotel), pickles, ketchup, Worcestershire, salt, and pepper; mix to combine.
Add the cream cheese and stir constantly until it is melted into the dip.
Reduce the heat to low and add the shredded cheeses; stir until melted.
Take off the heat and serve with more chopped pickles for garnish and parsley.
Enjoy warm with sturdy kettle potato chips as dippers!
Notes
Crockpot. You can also make this in your slow cooker. Cook the ground beef as directed above, with the onions and garlic. Drain the grease then transfer to your slow cooker. Top with the remaining ingredients and give it a stir. Cook on high for 2 hours, stirring occasionally.Turn the slow cooker to the warm setting to keep it nice and melty during the party. Be sure to stir every 15 minutes or so.
