Ingredients
12oz.dried rotini(or similar short pasta)
1pintcherry tomatoes
8oz.sliced cremini mushrooms
4clovesgarlicminced
¼cupextra-virgin olive oil
coarse salt and pepper to taste
¼tspcrushed red pepper flakes
5.2oz.round block of Boursin garlic and herb cheese(kept whole)
1cuppacked roughly chopped fresh spinach
¼cupgrated Parmesan
shaved Parmesanfor topping
Instructions
Preheat oven to 400°F. Place the cherry tomatoes, mushrooms, and garlic in an oven-safe greased 9x13 baking dish. Drizzle the olive oil on top and season with salt, fresh cracked pepper, and red pepper flakes. Toss to coat.
Push tomatoes and mushrooms to the sides, then place the Boursin round in the middle, having the tomatoes and mushrooms surround it.
Bake in the preheated oven for 30 minutes, until the cherry tomatoes burst, the mushrooms are roasted, and the cheese melts.
In the meantime, cook the pasta in a pot of salted boiling water according to package directions until al dente. Drain, reserving 1 cup of the cooking liquid.
When the Boursin and tomatoes are done cooking, immediately add in the spinach leaves, stirring so they wilt and to break down the cheese, combining everything to make a sauce.
Transfer the cooked pasta to the pan and toss to combine, adding in some of the reserved pasta water, if necessary, to achieve the desired consistency for the sauce. Stir in the grated Parmesan.
