Ingredients
12ouncesdried pasta
4clovesgarlic
2mediumripe avocados, pitted
2tablespoonsfresh lemon juice
3/4cupfresh parsley
2leavesfresh basil
1/2teaspoonSriracha hot sauce
3/4teaspoonkosher salt
1/4teaspoonfreshly ground black pepper
Instructions
Bring a large pot of salted water to a boil. Cook the pasta al dente, according to the instructions on the package.
In the meantime, make the sauce: In a food processor, pulse the garlic cloves until minced. Add in the avocados, lemon juice, parsley, basil, hot sauce, salt, and pepper. Pulse until combined and creamy. Taste and adjust seasoning, if necessary. (If the sauce is too thick, you can add a tablespoon of water or olive oil.)
Drain the pasta and place it back in the pot. Pour all of the avocado sauce on top and gently stir until combined.
Serve in individual bowls and enjoy. If you don't need this dish to be dairy free, we love it with a little Parmesan!NOTE: Because avocados oxidize quickly after you slice them, this sauce is best served immediately.
