Ingredients
For the Apples
3apples(peeled, cored, and sliced into bite-sized pieces, 1/4-inch thick)
Preheat oven to 375 degrees F. Coat an 8-inch square baking dish with nonstick spray.
In a large bowl toss all of the apple ingredients together until combined and the apples are coated. Transfer to the baking dish.
Make the topping: In a small bowl, whisk together the flour, cornstarch, apple pie spice, baking powder, and salt. Set aside.
In a medium bowl, using an electric mixer, cream together the butter and sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined.
Drop batter by rounded tablespoons over the apple mixture (try to cover as much of filling as possible.) Sprinkle the turbinado sugar over the top.
Bake in the preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling. (If the top is over-browning, you can tent with foil toward the end of baking.)
Allow to cool for 15 minutes.
Serve warm with a scoop of vanilla ice cream, if desired, and enjoy!
