Ingredients
6ounceskielbasa smoked sausage, sliced into 3/4-inch thick coins
8baby yellow (or red) potatoes, halved or quartered (each piece should be no bigger than 1-inch in size after being cut)
4ouncesgreen beans, ends trimmed, cut into 2-inch pieces
1teaspoondried Italian seasoning
1/4 teaspoononion powder
1/4 teaspoongarlic powder
1/8teaspooncrushed red pepper flakes
coarse salt and freshly ground black pepper, to taste
2tablespoonsolive oil
2tablespoonschopped fresh parsley
Instructions
Spray your air fryer basket with nonstick spray.
In a large bowl, toss together all the ingredients (except the parsley) so everything is well coated in the oil and seasonings.
Dump it all in your air fryer and try to arrange the potatoes so they're laying on the air fryer basket flat, cut side down - this will allow them to get a bit golden.
Air fry at 400F for 5 minutes, give it all a shake (no need to have the potatoes flat again), and air fry another 4 to 5 minutes until the potatoes are fork tender and the kielbasa is slightly charred.
Toss with the fresh chopped parsley and serve.

The size of the potatoes matter. The potatoes take the longest to cook, so it’s important to cut them small. If you prepare them properly, you should not need to pre-cook them. Baby potatoes are already fairly small, but they do vary in size. The potato pieces should be no bigger than 1-inch in size once cut.Lay the potatoes flat. Arrange the potatoes so they're laying on the air fryer basket flat, cut side down - this will allow them to get a bit golden.Don't overcrowd the air fryer basket. This recipe was tested in a 5.8 quart air fryer. Depending on the size of your air fryer, you might need to air fry in 2 batches. Don't overcrowd your air fryer or the potatoes won't cook through. Overcrowding will also prevent the ingredients from getting nice and crispy.Switch up the veggies. Some whole or halved (depending how big they are) Cremini mushrooms would be a delicious addition. They're soft and tender, and lend a savory flavor to the dish. If you don’t like green beans, red bell pepper chunks would be a good replacement.
