Ingredients
2teaspoonsolive oil
4largeeggs
1/8teaspoongarlic powder
1/8teaspoononion powder
coarse salt and pepperto taste
8cherry tomatoeshalved
handful of chopped baby spinach
1/3cupshredded mozzarella
1tablespoongrated Parmesan
toasted breadoptional, for serving
Instructions
Place an air fryer liner in the basket of your air fryer (see note.) Brush with olive oil.
Crack 4 large eggs over the liner and season with the garlic powder, onion powder, salt and pepper, to taste.
Sprinkle the halved cherry tomatoes, chopped baby spinach, mozzarella, and Parmesan over the eggs.
Air fry at 350F for 10 minutes.
Slice into quarters and enjoy on their own or over toast.

*This recipe was tested in a 5.8 quart air fryer. If yours is a different size, you might need to adjust the cook time.
