Ingredients
FOR THE DIP
1/4cupmayonnaise
1tablespoonlime juice
1/2teaspoonpaprika
pinchsea salt flakes
FOR THE CORN RIBS
3corn cobs
1/2cupbutter
2teaspoonsgarlic powder
2teaspoonspaprika
1small lime, zested and juiced
2red chilis, finely chopped
small handful cilantro or parsley, finely chopped
salt and pepper, to taste
Instructions
Combine all the ingredients for the dip. Chill until ready to use.
Remove any husks from the corn then slice them in half lengthways then in half lengthways again so you have 4 quarters. Put the corn into a large bowl.
Melt the butter in the microwave then whisk in the garlic powder, paprika, lime zest and lime juice. Pour over the corn in the bowl, then use your hands to massage the mixture into the corn.
Place the corn into the Air Fryer basket in single layer.
Air Fry at 400F for 12 minutes, flipping halfway through with tongs. (Note: You may need to air fry in batches depending on the size of your air fryer model.) The corn ribs are ready when they are slightly charred on the edges, the ribs of corn will have curled, and the corn will be juicy and tender.
Put the Air Fryer Corn Ribs on a serving plate. Scatter over the chopped chilis and herbs, and season with salt and pepper.
Serve with the dip and enjoy!NOTE: Even though we’re cutting these in quarters, each corn rib will still be attached to a part of the cob, which is inedible. Just bite the corn kernels off the cob, as you would when eating regular corn on the cob.
