This PF Chang’s Banana Spring Rolls copycat recipe is so easy to make at home! Also known as Banana Lumpia and Filipino Turon, this is a cheater version where they get a healthier make-over in the air fryer instead of deep fried. Ingredients
4largeripe bananas(or plantains, yellow and spotted)
In a small bowl mix together both the sugars and cinnamon; set aside.
In another small bowl, add a bit of water; set aside.
One at a time, roll the bananas in the cinnamon-sugar.
Roll the banana up in the egg roll wrapper like a burrito:Lay a wrapper on a clean work surface; place one banana piece at the lower corner. Roll the corner of the wrapper around the banana. Flatten the wrapper against the sides of the cut banana. Roll again, forming a little package with one corner sticking out towards the top.Dip the tip of your finger into the water and spread a little bit over the top corner of the wrapper.Continue to roll the banana until the wrapper is fully closed and surrounds the banana piece.(See pictures for visual directions, if uncertain.) Continue with the rest of the pieces.
Preheat air fryer to 400°F for 5 minutes.
Spray the basket of the air fryer with cooking spray. Place as many spring rolls into the basket as you can in a single layer without touching. Spray the tops of the rolls generously with cooking spray.
Air fry for 5 minutes, flip them over, and air fryer another 1-2 minutes until golden brown and crispy. Let cool a bit before eating - they are extremely hot - and enjoy!
Notes
Bananas vs. Plantains. You can use plantains or regular bananas for this recipe. Just make sure they're somewhat ripe. Normally I like bananas that don't have a single spec of brown, but for these spring rolls, riper bananas provide the best flavor.Add a slice of jackfruit. Make it closer to authentic Turon (banana lumpia) by adding in a little slice of jackfruit.Love chocolate? Stuff a couple mini chocolate chips in the wrapper along with the banana.Don't have an air fryer? You can bake the spring rolls instead on a non-stick baking sheet sprayed with a little oil, at 350 degrees F for about 15 minutes. Make sure to brush the wrappers with vegetable oil first so they will be crunchy and to prevent sticking.
