1cup(2 sticks) butter, room temperature
1 3/4cupsgranulated sugar, divided
1 3/4cupsall-purpose flour
1/2cupunsweetened cocoa powder
1/2teaspoon baking powder
1/4teaspooninstant espresso powder
Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
With a handheld mixer, cream together the butter and 1 1/2 cups sugar until light and fluffy, about 2 minutes. Add in egg and vanilla and blend until well-combined.
