10ouncesuncooked egg noodles
1 1/2poundslean ground beef
1mediumsweet onion, diced small
1mediumgreen bell pepper, seeds and ribs removed, diced small
1teaspoondried Italian seasoning
pinchcracked red pepper flakes
salt and pepper, to taste
14ouncejar/can pizza sauce
4ouncecan mushroom stems and pieces, drained
2cupsshredded mozzarella cheese
Preheat oven to 350 degrees F.
Coat a 13x9-inch baking dish with nonstick cooking spray; set aside.
Cook noodles according to package directions; drain.
In the meantime, in a large skillet over medium-high heat, cook the beef, onion, and green pepper until meat is no longer pink, breaking it up into crumbles; drain off grease. Stir in the Italian seasoning, cracked red pepper flakes, and salt and pepper, to taste.
Add in the pizza sauce and mushrooms; heat through. Season with a pinch more salt and pepper.
In the prepared baking dish, layer half each of the noodles, beef mixture, cheese, and pepperoni. Repeat layers.
Cover with foil and bake for for about 15 minutes or until heated through and cheese has melted.
