  • 1/2 cup orzo pasta ,uncooked
  • 1/3 cup diced red bell pepper
  • 2 ounce can sliced black olives ,drained
  • 1 cup finely chopped spinach
  • 1 whole scallion ,diced
  • 3 tablespoons crumbled feta cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons extra-virgin olive oil
  • 4 teaspoons red wine vinegar
  1. Cook orzo according to package directions, al dente, about 10 minutes; drain and transfer to a medium bowl.

  2. Toss in remaining ingredients.
