Combine all the ingredients (except the powdered sugar) until smooth. Then chill the dough.
Form & Roll

Form the dough into 1-inch balls, then roll in powdered sugar.
Bake

Bake on a parchment-lined cookie sheet at 375 degrees F for 9-10 minutes or until edges are *just* golden and firm.
Important!
You don’t want them to brown at all, so watch them carefully. They will appear slightly undercooked, but will firm up and flatten as they cool.
