Low-Sodium Soy Sauce
Ginger & Garlic
Mirin is a sweet Japanese rice wine, similar to sake, but with less alcohol and more sugar. A good substitute for Mirin would be sherry mixed with a bit of granulated sugar.

Makes 1 1/4 cups

Make a slurry
In a bowl, mix water and cornstarch until smooth.
Whisk together all the ingredients in a small saucepan.
Bring to a boil, then reduce heat to a gentle simmer for 4 minutes, until thickened.
Use as desired
