Ingredients

Boneless beef chuck

Onions, Carrots, &  Celery

Potatoes & Peas

Low-sodium beef broth

Worcestershire sauce

Beef bouillon cubes

Tomato paste

Garlic, Herbs, & Seasonings

All-Purpose Flour

Cook Time: 3 Hours

Brown the Beef

Season beef, add to pot with olive oil, in batches, and brown well all over. Transfer to a plate.

Add in Vegetables & Flour

Stir in the onion, carrots, and celery; saute for 5 minutes until softened. Add garlic and cook for 30-60 seconds. Stir in flour.

Pour in Broth

Pour in the beef broth, water, Worcestershire, beef bouillon cubes, tomato paste, bay leaves, and thyme.

Simmer

Bring to simmer, then adjust heat to low / medium-low so it’s a gentle simmer. Cover with lid, cook for 2 hours until the beef is tender.

Add in Potatoes & Peas

Add in the potatoes; simmer for another 20-25 minutes (without the lid) until the potatoes are tender. Then toss in the peas. 

Adjust Seasonings

Discard bay leaves and thyme. Adjust salt and pepper, if necessary

ENJOY!

Ladle into bowls, sprinkle with some fresh chopped parsley and enjoy with crusty bread, if desired.
