My freezer is never without chicken breasts, thighs, and ground beef. Such staples for each weeknight dinners, including one of our favorite comfort meals – Salisbury Steak.

Most people know Salisbury Steak from the popular 50’s TV dinner, but you can easily make it at home and a million times better, of course!

What is Salisbury Steak?

Well, it’s not steak at all. It’s basically seasoned hamburger patties formed into the shape of steaks. But then they’re taken up 10 notches by cooking in a luscious gravy and served over mashed potatoes. No bun, unlike a hamburger sandwich. It gets its name from James Henry Salisbury who was a doctor during the Civil War and served the original version to the soldiers.

All you really need to know, though, is that Salisbury steak is a delicious way to use ground beef for a family-friendly, easy 30 minute meal!

Key Elements for Salisbury steak

  • Breadcrumbs and an egg are needed to hold the patties together. You need breadcrumbs and an egg to act as a binder for the beef so they hold their shape while cooking.
  • Brown the patties first, then use the drippings to flavor the gravy. Once the patties have been browned, you’ll transfer them to a plate, using the pan drippings for added flavor while making the gravy and cooking the mushrooms.
  • Flour is used to thicken the sauce. Flour is added to the drippings, beef broth, and seasonings to create a rich and wonderful gravy!
  • The partially cooked steaks are returned to the pan. Once the mushrooms are tender, the steak patties are returned to the pan, simmering in the gravy until cooked through.

Recipe Variations

  • You can use ground turkey instead of beef. Traditionally this is an all-beef recipe, but you can use ground turkey and chicken stock, if you prefer.
  • Onions are a great addition. Saute some onions along with the mushrooms for another layer of flavor.
  • Turn these into meatballs! I’ve used this recipe for meatballs and then freeze them. Really great for last minute dinner!

Can I Freeze the Salisbury Steaks?

Yep! You can freeze uncooked steaks or cooked steaks along with the gravy, as follows:

  • To Freeze Uncooked Steaks – place the steaks on a lined baking sheet in a single layer, then flash freeze for about 2 hours until solid. Transfer them to freezer-safe bags or containers for up to 2 months. Thaw overnight in the refrigerator and proceed with the recipe as written.
  • To Freeze Cooked Steaks – allow to cool completely, then freeze steaks in the gravy in freezer-safe containers for up to 2 months. Thaw overnight in the refrigerator, then reheat in a pan or in the oven until warmed all the way through.

Easy Homemade Salisbury Steak

This Homemade Salisbury Steak Recipe is a throwback to the 50’s TV dinner, but a million times better and still so easy. On the table in 30 minutes for a great family friendly dinner option!

Ingredients 

For The Steaks

  • 1 pound lean ground beef
  • 1/4 cup panko breadcrumbs
  • 1 large egg, , beaten
  • 2 teaspoons ketchup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 tablespoon extra-virgin olive oil, (for the skillet)

For The Gravy

  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 1/2 cups beef stock
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 6 ounces sliced cremini mushrooms
  • Salt and pepper, , to taste

Instructions 

  • In a large bowl, mix together all the ingredients for the steaks (except the oil) until combined.
  • Shape the mixture into 4 equal oval patties, about 3/4-inch thick.
  • In a large nonstick skillet, warm the olive oil over medium-high heat; add the steaks and cook, about 3 minutes per side until they get a nice golden crust (reducing the heat if they're browning too much.) Transfer to a plate.
  • Reduce the heat to medium and in the same skillet with the drippings, add butter. Once melted, add in the flour and whisk until combined and no lumps remain.
  • Reduce heat to medium-low and pour in the beef stock, whisking well. Add in the ketchup, Worcestershire, onion powder, whisking to combine.
  • Add in the mushrooms, then simmer for about 5 minutes to thicken. Season with salt and pepper, to taste.
  • Add the partially cooked steaks back to the skillet and nestle into the gravy; cover and cook another 10 minutes until cooked through (with an internal temperature of 160 degrees F.)
  • Serve steaks over mashed potatoes with some of the mushroom gravy drizzled on top.

    Only things different I did, was double everything, I had no oregano, and I used sautéed onions instead of mushrooms because my SICILIAN HUSBAND DOESNT LIKE MUSHROOMS!     I eye-balled the ingredients. If you find that you’ve added too much ketchup and salt (like me), you can add baking powder. If you add flour, you risk messing up the thickness ratio and have to play with it again. Really good recipe.

As an adult who’s trying not to eat tv dinners, I found myself craving the flavor of the salisbury steak dinners without all the preservatives and ingredients I can’t pronounce.     Husband said he could have had 5 more helpings easily. We used Italian bread crumbs and shredded 1/2 onion to the meat. I cooked the mushrooms on the side because my husband hates them, but it was delicious without them. Will definitely be putting this on our dinner rotation. My 13 year old said it was a better version of meatloaf, which we all love as well.

    I’m getting a little older and try to avoid eating out of cans as much as possible. In place of the beef stock I gently boiled one 8 oz. package of sliced regular mushrooms in 1 2/3 cups water for 10 minutes and added it in place of the stock and mushrooms. I made a few more changes but followed the basic recipe here. It was very good and wasn’t lacking in flavor. Thanks.

    We also used Heinz beef gravy in the jar as a shortcut (will try the recipe gravy next time) but followed everything else.

        incredible flavor in this recipe! the only thing i did differently was use fresh onions that i caramelized as the patties browned. then i deglazed the pan with some leftover white wine in my fridge, because i wanted to use it up, and then also threw some fresh rosemary and thyme in the pan as the butter melted, because i also happened to have it in my fridge. i’m sure even without my additions that this recipe will delight you. it very easy to make, and i’m incredibly thankful for that. this recipe would be perfect for a quick weeknight meal.

      I made these yesterday for TV dinners, which we greatly enjoyed today! I used aluminum pie plates, with heavy-duty foil as dividers and to cover the top. Made yesterday, plated before simmering the patties in the gravy, put in the fridge, and reheated today in the oven (with a few small slits in the top foil). The sides were homemade mashed potatoes, with a pat of butter (gravy only on the steaks, but enough to dip into with the potatoes), broccoli and roasted corn (succotash would be fun), and homemade applesauce with cinnamon (so good heated!). I hope you enjoy as much as we did! One family member has been reminiscing about “TV dinners” lately. :D

    This came out so good! Except for the beef, we had all the ingredients on hand (next time, add in some sliced onion). I actually didn’t make it, delegated to my husband. He was very pleased with the results, and kept saying, “It was so simple”. We used our cast-iron instead of the non-stick and made one error, cooking the patties until they were almost done rather than the slow simmer in the sauce but still very good. Served with mashed potatoes; I am not a fan but the perfect vehicle for this sauce. Copied and printing now to add to our recipe book for quick weeknight dinners.

    Side note, if you decide to make 6 smaller patties, only cook for 2 mins on each side. Everything was perfect. I did however sautee minced onions in the drippings and butter before adding the flour and beef broth. Soooo good.

    I made this for the first time and didn’t know what to expect. Haven’t had Salisbury Steak for years and it was from one of those frozen cardboard containers you buy at the grocery store. These were nothing like the old frozen cardboard and were delicious. We will definitely be making these again. Perfect for comfort food and on a child night. This only thing I changed was I used brown mustard bc I did not have Dijon on hand but will try that next time. Tnxs

    Next time you want to make gravy combine the flour, seasonings and milk/stock in a jar. Shake until blended, pour in the skillet. It will thicken and make lump free gravy.

    Superb recipe!! I always make recipes and have to alter for the next time (add this, do that etc) not with this one. The only initial changes I made were I used spicy brown mustard, crushed croutons for breadcrumbs and I made the teaspoons heaping. I always made 12 small patties (using a small muffin pan) I air fried my patties and then simmered in beef jar (2) gravy for 30 min and served with mashed potato! Husband LOVED IT!! Thanks again

    Great recipe! One of the best meals I remember was when I was a kid and had dinner at Jerry’s Nugget with my dad. We both got the salisbury steak dinners. Before then .. I only remember eating it with TV dinners. Out of curiosity I looked up the recipe and realized just how simple it was. Almost as simple as popping in a TV dinner? By the way .. so many people with ketchup issues. Sometimes .. ketchup isn’t ketchup .. it’s just a vehicle for other ingredients. Ketchup is simply tomato paste, vinegar and sugar. One tablespoon is not going to make your food taste like ketchup. It’s like people who say they hate fish sauce, but love worcestershire (main ingredient fish sauce).

    I made this last night for friends, and it was a total success!! We decided it was the ultimate comfort food. So delicious!! The only change I made was that I left out the ketchup from the gravy…just because I’m not a huge fan of ketchup. It was still absolutely scrumptious. The steaks were really tender and tasty. Served with mashed potatoes (thanks, Bob Evans) and Lima beans. I highly recommend this recipe!!

    I needed to use up some leftover ground beef and found this recipe. What a pleasant surprise! Our meal was hearty and elegant. I will definitely be keeping this recipe in my rotation. I added some shallots and thyme to the gravy, and used saltines instead of bread crumbs (it was all I had) but otherwise made it exactly as directed. So good!

    My husband and I have fond childhood memories of Salisbury Steak dining with our respective families south FL in the late 50’s/early 60’s. But this recipe was by far better than anything we ever recall eating. It was delicious…tender & perfectly seasoned. I served it with mashed (butter) potatoes and sautéed sweet onions before adding mushrooms. I will definitely make this again and because I used rice flour, I’d reduce the flour to only 1 Tblsp. Thanks for providing an updated recipe for an ordinary standby of long ago.

    Made this recipe, but with several changes. Due to time constraints, I didn’t pan-brown. Rather I placed the formed Salisbury steaks in an olive oil coated glass baking dish(uncovered), and into the oven. Still browned nicely, @ internal temp of 175f.       You don’t need to sauté the mushrooms (and onions) first before adding to the gravy? I would think they’d be “boiled” instead of browned if you don’t cook first. I’ve never done it this way so I’m interested, and happy to skip a step ;)

    Stumbled on your recipe when faced w/another lb of ground beef. SO very glad I did. After browning the steaks, I slowly sautéed a sliced sweet onion, then made gravy to recipe, but added a can of sliced mushrooms (no fresh). Nestled steaks and put on low flame for 30 mins. The best SS ever! Served w/mashed potatoes and buttered carrots. Ty.

    This was so good! It was easy to make. I did a few things different. I used ground sirloin instead of ground beef, regular table mustard instead of Dijon. For the gravy, however, I used a can of Campbell’s French onion soup with 1 cup of beef broth. I skip the onion powder, ketchup and Worcestershire sauce. I add a little more flour and a little more butter just to make quantity of gravy. I chopped up just some baby bella mushrooms. Awesome!!

    I’ve been cooking for my Family (plus) for more than 50 years, but I had never made Salisbury Steak until last night (Hamburgers? Sure. Meatloaf? Of course. Meatballs?     EZ delicious and my family loved it. I didn’t have crimini mushrooms so I use Portobello. I don’t believe it change the recipe. Next time I’ll plan ahead and use cremini mushrooms.

    Very tasty – but the real plus is that my hubs with his health-caused poor appetite ate one entire portion and raved about it! Anything that encourages him to clean his plate is a winner! Of course I, too, enjoyed it.
