tater tot breakfast casserole

  • 4 eggs
  • 1 3/4 cups colby jack cheese
  • 3/4 cup small curd cottage cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 pound (about 6 slices) bacon, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups Ore-Ida frozen tater tots
  • chopped scallions for garnish


Preheat oven to 350F. Coat a 2-quart casserole dish with cooking spray.

In a large mixing bowl, whisk together the eggs, colby jack cheese, cottage cheese, salt, and pepper. Set aside.

In a large skillet, sauté the onion and bacon over medium-high and cook until bacon is crisp and onions are translucent; about 5 minutes. Drain off fat; add garlic and stir for 30-60 seconds until fragrant. Remove from heat stir into the egg mixture. Fold in the tater tots.

Transfer mixture to the prepared casserole dish and bake uncovered for 1 hour or until a knife inserted near the center comes out clean. Let stand 5 minute before serving.
