I’ve come to terms with my internal battle of not using the oven/stove in summertime. But, here’s my other struggle – wanting to use my blender after I exercise. But everyone is still asleep. I just ran 4 miles – I’m hungry, people! Granted I get up at 4:30. But…details.
The other morning, I actually took the blender and ingredients into the garage, so I could whirl away and not disturb anyone’s REM. True story. Yes, I suppose eating cereal would be infinitely
easier quieter. But smoothies are my life, friends. Remember?
So is exercise. It’s just part of my daily routine. I think once you get into the habit, it’s like a drug. Do I love it? Hm. That’s a strong statement. I love how it makes me feel…afterward. Nobody ever regrets the “afterward.” And it helps balance out a summer filled with ice cream and ice box cakes!
A healthy breakfast helps balance that out, too. Most important meal of the day, as they say. (Although I would argue that they’re all important to me. HEH.)
Along with the pudding, I also tested their dairy-free milk in some savory scones, and of course it’s perfect for smoothies.
Here, almond and coconut milk replace yogurt in this Indian drink. It’s filling, refreshing, and perfect for summer or after a run!
Prep time: 5 minutes
• 1 1/2 cups raspberries
• 2/3 cup ice
• 1/2 cup unsweetened coconut milk
• 1/3 cup SILK vanilla almond milk
• 2 tablespoon granulated sugar
Place all ingredients in a blender and puree until smooth and frothy. Pour into tumbler glasses and enjoy!
