Do you have a guilty pleasure food? That one food that you’re sort of embarrassed to admit you enjoy. Like spam or canned asparagus?
Mine is KRAFT American slices. You know, the cheese that doesn’t seem to be real cheese and that certainly any cow would deny being a part of. I just love them. I buy them in the jumbo packs and eat
a few way too many every day.
Several weeks ago, one of my friends mentioned craving a McDonald’s Egg McMuffin. I haven’t had one of those in ages. Years. I mean, I think I was in college. So, basically forever ago. But between that and the cheese, I was inspired to make these with my left over biscuits. ( And yes, I know the Egg McMuffin is made with English Muffins, not biscuits. I did say inspired!)
I believe these easily give the McMuffin a run for its money. At least from what I can remember.
Sausage and Egg Biscuit Sandwiches
Prep time: 20 minutes
• 4 buttermilk biscuits
• 4 frozen sausage patties
• 1 tablespoon butter
• 2 large eggs, beaten
• 4 slices KRAFT American cheese
Heat sausage patties according to package directions.
When the sausage is almost done, melt butter in a small nonstick pan over medium-high heat. Add eggs and tilt pan to spread them evenly. Let them firm up a bit, and after about ten seconds loosen the edges with a spatula and allow the remaining liquid to flow into the space at the sides of the pan. Continue to cook for another minute or so until the egg seems fairly solid. Using your spatula, gently fold over; cook for another 15 seconds and remove to a cutting board. Cut the egg into 4 even sections.
Carefully cut your biscuits in half, and if they were made the previous day, warm them in the microwave for about 20 seconds. Lay a piece of cheese on the bottom half, followed by a hot sausage patty, then some egg, and the top biscuit half. Eat right away and enjoy!
